Shannon Waltchack broker Keith Shamblin represented the landlord in the expansion of The Flying Biscuit at the Shops at the Colonnade. Flying Biscuit opened at the Colonnade in the Fall of 2019, and quickly shifted its business model throughout the pandemic to focus on pickup and delivery orders. They have decided to increase their suite size to 6,000+ SF by taking over the adjacent former Marco’s Pizza to add a dedicated to-go and catering area.
Local franchisee owners Joe Yund and his son Greg operate the chain’s first and only location in Alabama. They are currently working with Shamblin to identify additional locations throughout the state.
“I am excited to continue working on site selection with the Yunds. Their restaurant has a big following in Birmingham, and we are excited to introduce the concept to new markets in Alabama,” said Shamblin.
Flying Biscuit serves breakfast all day, every day of the week. Their outdoor patio attracts a strong after-church crowd.
“We are expanding our location at the Colonnade to serve our patrons’ needs with the growing demand for to-go and catering orders. We are looking forward to opening new locations in other Alabama cities very soon,” said Yund.
